You don't book a restaurant the way you book a hotel room. You go for a dish. Here is why the real AI battle is fought at dish level — and how to win it.
A hotel gets booked as a whole. A night, a room, a price. A restaurant doesn't work that way. People come in for a dish, a moment, a craving. "Where can I eat the best oysters in Cancale?" "Best burger in Lille?" "Couscous on a Sunday?"
That's a difference in kind, not degree. And it changes the whole AI visibility game.
Diners think in dishes, AIs answer in dishes
A huge chunk of restaurant queries doesn't aim at a category ("good restaurant"). They aim at a dish or a speciality. AIs answer at that granularity without breaking a sweat. They'll name "the house known for its soufflé" or point straight to "that specific ramen spot".
If your place is known for one signature dish, that's your best way in to AI responses. It's often easier than fighting for the ultra-crowded "best restaurant [city]".
Why a tool built for hotels misses the point
AI-visibility tools built for hotels think at the establishment level. Signature dish, menu, regional speciality? Those concepts don't exist in their model. They'll never tell you whether you show up for "best Neapolitan pizza in the neighbourhood".

How to build dish-level visibility
- Pick your 2 or 3 signature dishes, the ones people already recommend you for.
- Structure them. Mark up Menu and MenuItem in schema.org, named clearly, with prices. AIs read what's structured.
- Anchor them in your content. A page or paragraph about "our speciality", echoed in reviews and local press.
- Measure. Track dish-level prompts ("best [dish] in [city]"), not just the category.
The signature dish test

Start by measuring. Which dishes do AIs already cite you for? The answer often surprises you, and it opens a direct path.
